Breakfast Popsicles

Servings 12 large popsicles
- 2 cups spinach
- 2 cups coconut water (or milk of choice)
- 2 cups frozen fruit (we love tropical fruit blends but choose your family's favorite)
- 1 whole ripe banana (fresh or frozen)
- 3 tbsp chia seeds
Start by adding the spinach and coconut water to the blender and blend until smooth.
Next, add the frozen fruit and blend.
Tear the banana into three to four pieces and add to blender. Blend until smooth.
Add the chia seeds and give the blender a few pulses until the chia seeds have blended through the smoothie.
If the smoothie seems thick I would add more coconut water. You want it to be easily poured so adjust the liquid accordingly.
Once everything is blended begin pouring the smoothie into your popsicle molds.
Place your molds in the freezer and let freeze at least four hours. Overnight is best but if everyone is excited for them I understand:)
